We love to cook our souvlaki with metal skewers over a bread pan. Unlike wooden skewers, the metal ones don’t require a presoak. We cook the skewers over a bread pan to catch the drippings and cook evenly on all sides of the meat. A garlic press is a handy tool to crush the garlic cloves quickly.

Note about skewers:

We use metal skewers, but if you are using wooden skewers, you need to soak them in water for 15 minutes or so, ahead of using them. Place the wooden skewers in a shallow dish that is long enough to hold them, filled with enough water to cover, then set aside.

STEP 1 — Prepare the Pork

If using wooden skewers, presoak them for 15 minutes. Start by cutting two tenderloins into approximately 1-inch pieces. Cut against the grain, perpendicular to the meat fibres. Transfer the pork cubes to a large mixing bowl and set aside.

STEP 2 — Make the Greek Souvlaki Marinade

Pour olive oil into a small mixing bowl. Then add the freshly squeezed lemon juice.

Add the Greek seasoning blend and the minced garlic. Mix the ingredients with a fork or whisk.

STEP 3 — Marinate the Pork

Pour the marinade over the pork tenderloin pieces then mix the meat with the marinade. Make sure that all of the meat is evenly coated.

Cover the bowl with a lid or cling wrap and allow the pork to marinate in the fridge for 15 minutes, or longer, preferably overnight.

If you have time, you can prepare this the night before you need it, or early morning on the same day you plan on cooking these.

STEP 4 — Make the Pork Skewers

Preheat the oven to 400℉. When the meat is done marinating, uncover the bowl and prepare the skewers. If you are using wooden skewers be sure to soak them for about 5-10 minutes before using.

Thread 7 or 8 pieces of pork onto each skewer. When a skewer is complete, place it across a bread pan that will act as a drip tray in the oven. Continue adding pork to the skewers and place each on the bread pan. If you have extra meat, add an extra piece on to the existing skewers by placing the meat tighter together.

You can pour any leftover marinade over the pork at this point, to make it juicier and add flavor.

When you are finished preparing all of the pork souvlaki kebabs, place the bread pan with the souvlaki kebabs on it, carefully into the preheated oven.

TIP: This method allows the pork souvlaki to cook well on each side without burning. The pork souvlaki turns out tender and flavorful this way.

STEP 5 — Bake in Oven

Place the bread pan with the skewers in the oven and bake at 400°F for 10 minutes. After 10 minutes, remove bread pan from the oven and place on a heat resistant surface. Use caution and oven mitts to turn the skewers over. Place the bread pan back in the oven and bake for an additional 10 minutes.

Then remove from oven and let the souvlaki rest for 3 minutes.

It is very important to check the pork with a digital meat thermometer to ensure the internal temperature of the pork reaches at least 145°F , with a 3 minute rest time.

Use a digital thermometer places into the thickest part of the pork to verify. If the temperature is lower, return to oven for a few minutes longer.

Remove from oven and check again with a food thermometer. Repeat this process until the pork has reached a safe to consume temperature.

Tips for the Best Pork Souvlaki

Cut the Pork Evenly – cut the pork into similar-sized pieces so it cooks at the same rate. About 1.5 inch pieces work well for skewers.

Don’t Skip the Marinade – Even a short marinade adds lots of flavor. If you have time, marinate the pork for 2-4 hours for even better results.

Don’t Overcrowd the Skewers – leave a little space between pieces so the hot oven air can circulate and the pork can brown.

Use High Heat – a hot oven helps replicate some of the browning you would get from using a grill.

Broil Briefly for Restaurant-Style Color – after the pork is cooked through, broil for 1-3 minutes to get nicely browned edges. Watch closely because the pork can brown quickly.

Finish With Fresh Lemon – a small squeeze of fresh lemon over the hot pork brightens the entire dish and makes the flavors pop!
