Ingredients used in Greek Omelet With Gyros and Feta

- Gyros – we use our homemade lamb gyros (Instant Pot or sheet pan method)
- Eggs – two large sized eggs are needed for each omelet.
- Feta – we prefer to buy block feta and crumble it, instead of buying crumbled feta.
- Cheddar Cheese – some shredded cheddar cheese, or you can substitute similar shredded cheeses.
- Olive Oil – extra virgin olive oil, for the pan to fry the vegetables.
- Spinach – some fresh spinach or baby spinach leaves. You can chop or leave them whole.
- Onions – finely diced red onions.
- Bell Peppers – thinly sliced bell peppers.
- Tomato – diced tomato are added with the vegetable stir fry.
- Greek Seasoning – we use our Greek Seasoning Blend
- Milk
- Butter
- Basil – some chopped fresh basil or other fresh herbs to sprinkle over the dish as garnish.
- Tzatziki – it’s optional, but you can add a side of tzatziki to make it restaurant-style.
- Lemon – also optional, but brightens it up.

Recommended Equipment
A sturdy cast-iron or non-stick skillet is recommended. We love our Le Creuset, although it was pricey we have used it daily since. You’ll also need a medium to large mixing bowl and a large spatula to flip the omelet.
How to Make Greek Omelet With Gyro and Feta

STEP 1 – Sauté Vegetables
Pour olive oil into a medium-hot skillet. Then add the diced onions. Brown the onions while stirring occasionally. Add the sliced bell peppers and chopped tomatoes and fry them with the onions for a minute or two.

Then add the chopped spinach. Cover with the lid and cook the vegetables for about five minutes until the bell peppers begin to soften.

Stir the vegetables every minute so they don’t burn. When the veggies are cooked and soft, transfer them to a bowl and set aside.

STEP 2 – Whisk Eggs With Milk and Seasoning
In a separate bowl, crack two eggs. Whisk the eggs together to mix the egg yolk and white. Pour in the milk.

Add the Greek seasoning blend and mix the eggs, milk and seasoning together well.

STEP 3 – Pour in Egg Mixture
Melt 1 Tablespoon butter in the medium-hot skillet. Then pour in the egg mix and evenly distribute it in the pan. You can do this by lifting the pan and tilting it so that the egg spreads out.

STEP 4 – Arrange Toppings
Fry the egg for a few minutes until the surface starts to solidify. Then arrange the chopped lamb gyros evenly over top of the egg. Then add the reserved fried vegetables on top of the gyros. Sprinkle on a half cup of the shredded cheese, and a half cup of crumbled feta.

STEP 5 – Fold The Omelet Over
With a large spatula, fold the omelet over in half. Sprinkle the remaining half cup of shredded cheese over top. Cover with a lid for a minute or so, to allow the cheese to melt. Transfer to a serving plate, and garnish with additional crumbled feta cheese and fresh herbs, if desired. Enjoy!

- ¼ Cup Bell Peppers, sliced
