Ingredients used in Brie Stuffed Dates

- Brie Cheese – a wheel of Brie cheese, ours was from Costco, a Kirkland Signature Double Cream 600g, but smaller wheels will work too. You can bake or even microwave the Brie to melt it enough to use it in this recipe. Follow the package instructions for baking, according to the size of the wheel of Brie that you have. You can refer to our baked Brie with dates and pistachios for our baking method.
- Dates – Choose Medjool dates
- Pistachios – chopped
- Hot Honey – prepared store bought or homemade hot honey, or if you don’t have any, the recipe is very easy, and only takes about 5 minutes.

Recommended Equipment
You’ll need a sturdy cutting board and knife to prep the dates. A baking sheet for the oven to bake the Brie and then warm the stuffed dates.
These convenient pre-cut parchment paper sheets are also handy.
How to Make Brie-Stuffed Dates
This is a simple dessert that feels decadent.
STEP 1 — Remove Pits
Preheat oven to 375℉. Use a serrated knife to cut through the center of the dates, but not all the way through. Remove the pits (also called stones) from each Medjool date.

STEP 2 — Fill Dates With Brie
Prepare a baking sheet with parchment paper. Arrange the dates on top of the parchment paper, leaving some space around each one.
Use a teaspoon to add Brie to the center of each date. Fill with a generous teaspoon of Brie. You can use a previously baked Brie that is still warm, or you can even remove the packaging and microwave Brie to get it soft enough to work with.

STEP 3 — Sprinkle on Pistachios
Add a topping of chopped pistachios to each Brie-stuffed date.

STEP 4 — Bake Brie-Stuffed Dates
Bake for 6 minutes or so, until the Brie is soft and melted.

STEP 5 — Top With Hot Honey
Remove warm dates from oven and transfer them to a serving plate. Drizzle hot honey (or honey if you prefer a milder flavor) over top of each Brie-stuffed date. Serve while warm but not too hot. Enjoy!

Tips for the Best Brie-Stuffed Dates
- Use soft, plump dates. Medjool dates are ideal because they are large, naturally soft, and easy to stuff.
- Buy pitted dates when possible. If your dates still contain pits, slice them lengthwise and remove the pit before filling.
- Don’t overfill the dates. A small piece of Brie is enough. The cheese will soften and spread as it warms.
- Leave the Brie rind on or remove it. Both work. Removing the rind gives you an especially smooth, creamy filling, while leaving it on adds a little more Brie character.
- Warm them just until the Brie softens. You don’t need to cook the dates for long. The goal is warm, tender dates and soft, melty cheese.
- Add the hot honey after warming. Drizzling it over the warm dates keeps the honey glossy and lets the spicy-sweet flavor stand out.
- Add pistachios at the end. Chopped pistachios provide a wonderful contrast to the soft dates and Brie. They also make the appetizer look beautiful.
- Use flaky sea salt if you like. A tiny sprinkle of flaky sea salt over the finished dates makes the sweet and spicy flavors pop.
- Think Like a Restaurant: Arrange the stuffed dates on a serving platter rather than simply placing them in a bowl. Drizzle hot honey over the entire platter, scatter pistachios around the dates, and finish with a few flakes of sea salt.

- ⅛ Cup Hot Honey, or honey if you prefer a milder flavor
