This stunning lobster sandwich cake (lyxig skaldjurs smörgåstårta) has it all and is perfect for your most special occasions.
Four savory seafood sandwich fillings are stacked up into one super epic sandwich.

It’s perfect for festive occasions like New Year’s Eve, a milestone birthday or another very special event.
Most often we make our seafood smörgåstårta that is similar, and quite impressive as well. But when we want to pull out all of the stops, it’s this lobster sandwich cake.
In other words, if you want to go big, then this lyxig skaldjurs smörgåstårta (luxe shellfish sandwich cake) literally takes the cake!

Since lobster and other types of shellfish are expensive, we reserve this for very special times of the year. Although it is pricey, we find that ordering nice takeout for 8-10 people is also quite expensive. So, for perhaps a little more cost, in the end, it is good value when you make your own food at home.
Plus, you don’t have to include all of the seafood we’ve shown. You can decorate the top with fewer seafood ingredients and it will still be a great sandwich cake.
And, if you like, you can substitute one or two of the seafood sandwich fillings with less expensive fillings, such as tuna salad and salmon salad.

Ingredients in Lobster Sandwich Cake (Lyxig Skaldjurs Smörgåstårta)

- Bread — use your bread of choice, our lobster sandwich cake is made with low carb and gluten free Carbonaut bread.
- Egg — we use large Omega 3 eggs.
- Cold Water Shrimp — thawed and drained.
- Lobster — meat from tails, claws and legs.
- Jumbo Shrimp — we use Argentinian shrimp for the flavor.
- Crab Meat — we used legs from Snow Crab.
- Sandwich Fillings (choose your favorite four):
- Lobster Salad Sandwich Filling (hummersallad till smörgåstårta)
- Crab Salad Sandwich Filling (krabbröra till smörgåstårta)
- Egg Salad Sandwich Filling (äggsallad till smörgåstårta)
- Shrimp Salad Sandwich Filling (räkröra till smörgåstårta)
- Salmon Salad Sandwich Filling (laxsallad till smörgåstårta)
- Tuna Salad Sandwich Filling (tonfiskröra till smörgåstårta)
- Smoked Salmon Salad Sandwich Filling (läxröra till smörgåstårta)
- Labneh — a thick yogurt cheese with flavor and texture similar to cream cheese.
- Sour Cream — use full fat, not light or fat free.
- Mustard — we love honey mustard in this sandwich cake.
- Cheese slices — we use Havarti cheese
- Optional Garnishes — Feel free to choose your favorites from the following:
- red onions
- cucumber
- lemon
- chives
- parsley
- grapes
You can choose the number of layers in your lobster sandwich cake.
The sandwich cake we made had four layers – from bottom to top it was shrimp salad, egg salad, crab salad and lobster salad, with additional seafood on the top.

We filled up the top of our sandwich cake with extra crab meat from crab legs, lobster tails and both cold water and jumbo shrimp.
Plus, we used egg slices, grapes, parsley, lemon slices and red onions to garnish the smörgåstårta.

You don’t need to include everything shown on top. If you are missing something, you can use your creativity to arrange garnishes in a way that works for you. You really can’t go wrong!
How To Make Lobster Sandwich Cake
It’s not as difficult to make a sandwich cake as it would seem. To start, you will need to combine the ingredients for four separate sandwich mixes.
You will also need to combine the ingredients for the savory frosting that helps the cake hold together as well as meld the flavors.
We like to make these ahead the night before we make the sandwich cake. That way, it is much easier to prepare the cake the next day.
You don’t have to though, if you don’t mind doing it all in one day, that’s totally up to you. So, once you decide on your four sandwich fillings and make them up, then you can move on to the cake assembly process.
We use a low carb, gluten free bread called Carbonaut. You can substitute other bread types, of course, but if you are minding carbs, this bread works well.
Cut the crusts off the bread slices and arrange the first layer of bread on the serving platter. Spread on one sandwich filling. Add another layer of bread slices. Continue with the next sandwich filling. Repeat with the next bread layer, and so on. Until you have reached the top of the cake.
Then, you will need to garnish the sides and top of the sandwich cake, using your creativity. You can follow our stepwise instructions to garnish as we have done if you like!

What To Serve With Lobster Sandwich Cake
You won’t need very much to go with this as it is quite rich and filling as is. Although, if you’d like to, you can make Red Lobster style shellfish pita pizzas or another seafood pita pizza, like clam white sauce pita pizza or crab melt pita pizza.
We served those alongside this sandwich cake and it was a really good combination.
Serve with sparkling pear or apple cider.
Preparation and Storage Tips
We recommend preparing at least some of the sandwich fillings the night before you make this. Refrigerate the fillings in separate bowls, covered, until you need them.
That way, the cake will be easy to assemble and garnish the next day and will not overwhelm. If you have enough time, and don’t mind it, you can certainly make the whole cake, fillings and all, on the same day.
You will need to hard cook your eggs in advance.
We use our Instant Pot to cook eggs.
Just place a trivet in your Instant Pot with 1.5 cups water. Place your eggs on the trivet, fasten lid and set to 5 minutes on HIGH pressure, with 2 minutes of natural release. Once that is complete, place the cooked eggs in an ice bath, fully submerged in the cold water for 5 minutes.

If your seafood needs to be cooked, you will need to do that in advance of the sandwich fillings as well.
We had cooked lobsters and crab legs that we removed the meat from. You will need shellfish tools to help crack the shells.
We also had some uncooked jumbo shrimp and lobster tails that we baked in the oven for about fifteen minutes at 450°F (230°C).
When you have your cooked eggs and seafood meat removed, you can make the sandwich fillings. Four fillings are needed for this (egg salad, shrimp salad, lobster salad and crab salad). You can substitute tuna salad, salmon salad or smoked salmon salad for one or more, if you like.
You need the savory sandwich frosting, to use around the edges of the cake. Mix up a batch of labneh, sour cream and the rest of the ingredients.
Cut the crusts off of your bread, making similarly sized rectangles to keep the cake layers uniform in size.
Place the base bread layer on a serving platter just sightly larger than the base bread layer. Continue to assemble the cake right onto the serving platter.
Spread each filling onto a bread layer and add more bread layers and fillings until the sandwich is finished.
Garnish the sides and top of the sandwich cake with additional seafood, grapes and vegetables.

Once your smörgåstårta is assembled, you can keep leftovers in the fridge for 2-3 days, although we would recommend enjoying it within a day or two for the freshest flavor.

- 12 ounces Shrimp, cold water shrimp, 340g
- ¼ Cup Labneh
- ¼ Cup Sour Cream, regular, not fat free or light
- ¼ Cup Dill, chopped fine
- ⅛ Cup Chives, chopped fine
- 2 tablespoons Lemon Juice, freshly squeezed

Egg Salad Sandwich Filling
- 6 Eggs, hard cooked
- ¼ Cup Labneh
- ¼ Cup Sour Cream, regular, not fat free or light
- ¼ Cup Dill, fresh dill, chopped fine
- ¼ Cup Red Onion, diced fine
- 2 tablespoons Lemon Juice, freshly squeezed
- 1 teaspoon Hot Sauce, Frank's

- 6 ounces Crab Meat, canned, drained well, or lump crab meat

- 1 Cup Lobster Meat, cooked, removed from shell

- 1 tablespoon Dill, finely chopped

- ¾ Cup Labneh
- ¼ Cup Sour Cream, regular, not low fat or light
- ½ tablespoon Honey Mustard
- ¼ Cup Fresh Dill , chopped fine
Bread
- 24 slices Carbonaut Bread, 2 loaves, low carb, gluten free or sub bread of choice
Cheese and Optional Garnishes
- 6 slices Havarti Cheese
- 4 Eggs, hard cooked, sliced thin using egg slicer
- 6 Crab legs, cooked, meat removed
- 2 Lobster Tails, cooked, meat removed
- 8 Jumbo Shrimp, large shrimp
- 1 Cup cold water shrimp, drained
- ½ Cucumber, sliced into thin rounds
- 1 Lemon, sliced
- ⅛ Cup Red Onion, sliced fine
- 6 Grapes, red grapes
- 6 sprigs Parsley, fresh
Instructions
Prepare Four Sandwich Fillings in Four Separate Bowls
- Combine ingredients for four sandwich fillings (shrimp salad, egg salad, crab salad and lobster salad). Cover and place in refrigerator until ready to assemble the sandwich cake.
Prepare the Savory Frosting
- Add labneh, sour cream and honey mustard to a medium sized bowl.
- Mix well to thoroughly combine. Cover and store in refrigerator until ready to assemble the sandwich cake.
Assemble the Lobster Sandwich Cake (Smorgastarta)
- Remove end pieces and cut off the crusts from two loaves of Carbonaut (low carb, gluten free) bread. Try to cut them into similarly sized rectangles as much as possible. (Note: you can reserve the crusts to make gluten free, low carb stuffing or bread crumbs so the bread does not go to waste)
- On a flat serving platter, place six slices of bread to form the base of the cake.
- Spread the shrimp salad sandwich mix evenly over top of the bread to cover completely.
- Place another six slices of bread on top of the shrimp salad layer.
- Spread egg salad sandwich mix evenly over top of the bread to cover completely.
- Place six more slices of bread on top of the egg salad sandwich layer.
- Spread crab sandwich filling evenly over the six slices of bread to cover completely.
- Place another six slices of bread on top of the crab salad sandwich layer.
- Spread the lobster salad sandwich filling evenly on top of the bread layer. Depending on the amount of lobster, you may need to arrange it in a line down the center, if it does not fully cover the top.
- Get the prepared savory frosting from fridge and spread it on the top and around the outside edges of sandwich cake.
Garnish Your Sandwich Cake
- Place sliced egg on the top of the sandwich cake.
- Arrange jumbo shrimp around the top edges of sandwich cake.
- Place the drained cold water shrimp evenly over top of the lobster filling.
- Add lemon slices in twists, sliced red onions and sprinkle on the chives evenly over top.
- Arrange lobster tails and crab meat from the crab legs on the top of the sandwich cake.
- Add red grapes and parsley.
- Place Havarti cheese slices around the outside walls of sandwich cake. Press the slices one by one, against the savory frosting and the cheese will adhere to the cake.
- Place sliced cucumber onto the cheese around the walls of the sandwich cake.
