It’s an easy Philadelphia cream cheese ice cream cake made with eggs and with a delightful cookie crumb topping.

Enjoy it with a side of fresh fruit salad, a berry and cherry mix, fresh blueberries or simply with sliced strawberries!

We love to buy ice cream cakes at the major ice cream stores like Dairy Queen and Baskin Robbins for birthdays and holidays.

But when we’re having a smaller celebration, it’s nice to be able to make our own easy homemade cream cheese ice cream cake recipe.

The cheese cake ice cream is thicker and more of a custard in our recipe due to the addition of eggs.

There is a risk of salmonella whenever you use raw eggs as an ingredient and you may prefer to use an egg substitute although we haven’t tried it.

Ingredients in Frozen Custard Cheesecake No Bake Recipe

This frozen custard ice cream cake is made with a few basic ingredients that you may even have on hand.

  • Cream – we use heavy whipping cream
  • Eggs – three large sized eggs, whites and yolks separated. NOTE: Like many homemade ice cream recipes, ours has raw eggs as an ingredient. There is a risk of contracting salmonella whenever you consume raw eggs. Feel free to use an egg substitute in place of raw eggs.
  • Cream Cheese – regular Philadelphia cream cheese, not low fat or light versions.
  • Graham Crackers – some crushed graham crackers provide a nice cookie crumb topping to the dessert. These are the same crackers used for s’mores. Feel free to substitute with Digestives or similar crackers.
  • Honey – use pure liquid honey in this recipe for the best results
  • Vanilla Extract – we recommend pure vanilla extract for the best flavor but any vanilla extract will work.

Why You’ll Love This Cream Cheese Ice Cream

This ice cream cake is simple to make and it is free of any artificial colors and artificial flavors.

We substitute pure honey instead of granulated sugar for this recipe since we don’t like to include refined sugar in our recipes.

Although, we do have some crushed graham crackers on top of the cake that are mostly for garnish and they add a little extra flavor and crunch!

The graham crackers are totally optional though, and if you like you can substitute another type of cookie crumbs or just omit.

Kitchen Tools Needed

We use a silicon Bundt pan, that makes it super easy to release the ice cream cake from the pan after it’s frozen.

Because the silicon Bundt form is pliable, you can get the ice cream cake out by just turning the cake upside down onto a plate and carefully trying the edges until the ice cream cake comes loose.

Use care when removing the Bundt pan, to ensure that it is completely unattached from the ice cream before lifting it off.

A hand held electric mixer is helpful to whisk the cream into foam as well as the egg whites.

A KitchenAid or similar stand mixer is also recommended although not necessary. You can whip the eggs and cream by hand with a whisk if you don’t have one. Of course, a stand mixer will make this recipe much easier and quicker for you.

How To Make Cream Cheese Ice Cream Cake

STEP 1 – Whip the Cream

Pour the cream into a medium sized mixing bowl. Use an electric handheld mixer to whip the cream until a dense foam.

You can tell if the cream is whipped enough by tipping the bowl to the side. The cream will not slide in the bowl when it is ready.

Be careful though to not whip the cream too much as it will start to turn into butter instead.

STEP 2 – Separate the Eggs

Separate the egg yolk from the egg whites into two individual mixing bowls. The bowl for the yolk should be able to fit all the other ingredients (whipped cream and egg whites).

STEP 3 – Whip the Egg Whites

Use the electric mixer again to whip the egg whites into a dense foam.

The egg whites may dissolve back into a liquid if it sits for too long. But just give it a few spins with the electric mixer again before pouring it into the egg yolk bowl (steps to follow below).

STEP 4 – Add the Cream Cheese

Add the cream cheese to the egg yolk. Use a fork to break down the cream cheese and blend it with the egg yolk.

Don’t worry if there are some pieces of cream cheese in the the yolk — they will be blended in the next steps anyway.

STEP 5 – Add Honey and Vanilla Extract

Pour in the liquid honey and vanilla extract into the egg yolk and cream cheese bowl.

Again, use the electric mixer to blend all ingredients until the cream cheese is completely dissolved.

STEP 6 – Add Crushed Crackers to Bundt

Crumble the crackers and evenly spread the crumbs on the bottom of the Bundt pan.

STEP 7 – Mix Add Custard to Bundt

Pour the whipped cream and egg whites into the egg yolk and cream cheese mix.

Use a manual whisk to blend all the ingredients.

STEP 8 – Mix Add Custard to Bundt

Slowly pour the custard mix into the Bundt pan.

Be sure to pour the mix evenly across the pan without pouring too fast in one spot as this may shift the crumbs and leave an empty area later.

Place the Bundt pan on a plate and on a flat surface in the freezer, to ensure that it won’t move or tilt while in the freezer.

Allow to freeze for at least six to eight hours and preferably overnight.

What To Serve With Cream Cheese Ice Cream Cake

This ice cream custard cheesecake is wonderful with any fresh chopped fruit or berries. We love ours with a blueberry, blackberry and cherry blend. It’s also amazing with fresh sliced strawberries.

Ingredients

  • Place the cream cheese into the bowl with the egg yolks. Crush the cream cheese using a fork.

  • Pour in the liquid honey and vanilla extract. Use the electric handheld mixer to blend the ingredients well.

  • Crumble the graham crackers into a cake form. We use a standard size (9") silicone Bundt pan. Make sure the crumbs are evenly distributed in the pan.

  • Pour in the whipping cream and the egg whites into the yolk and cream cheese mix. Use a whisk to blend all ingredients well.

  • Gently pour in the mix into the Bundt pan, spreading the mix evenly in the pan. Do not pour too fast as the mix may push away the crumbs where you pour. Place the pan in the freezer for at least 6 hours, preferably over night. You can cover the pan with a lid, or a dinner plate if there is no lid.

  • When it is time to serve the cake, place a serving plate up-side-down on the Bundt pan. Hold the plate and the pan together. Turn them up-side-down and place them on the table (the plate facing the correct way now). Carefully separate the cake from the Bundt pan by pushing down the top of the pan (pushing the cake down onto the plate). Serve while cold.
