  • Eggs — This recipe uses six large sized eggs.
  • Doner Kebab Meat — use cooked, sliced and chopped doner kebab meat, we love our easy Instant Pot method.
  • Kebab Sauce — prepared white doner kebab sauce goes into the whisked egg mix with milk or cream and is the secret to an extra flavorful quiche!
  • Milk — We used 3.25% milk, although cream is lower in carbs so you might prefer to use cream if you are trying to keep carbs low.
  • Mozzarella Cheese — We chose to use shredded mozzarella cheese, although other shredded cheese can also work nicely.
  • Kale — chopped kale is an excellent vegetable choice in this, although you can sub spinach or other greens.
  • Red Onions — diced red onion or if you don’t have it, you can use yellow or white onion instead.
  • Bell Pepper — We love the color contrast of red bell pepper in this, although any bell pepper works.
  • Butter — We use a little salted butter but you can use unsalted and add a small amount (1/4 to 1/2 teaspoon) if you wish.
  • Pomegranate Molasses — We included this because we love the flavor with onions and bell peppers, although if you don’t have any it’s ok to omit.
  • Red Pepper Flakes — This is optional, it adds some flavor but mostly for garnish on top of the quiche.
  • Chives — Chopped or fresh snipped chives are optional, but are also used for garnish.

Stir fry until ingredients are tender and onion is translucent (about 5-8 minutes).

STEP 2 — Whisk Eggs and Sauce Mixture

Crack eggs into a large bowl. Add cream or whole milk as well as the kebab sauce.

Whisk until the mixture is smooth.

STEP 3 — Add Ingredients to Pie Plate

Place sauteed vegetable and meat mixture into the pie plate, covering the bottom.

Arrange half of the mozzarella evenly over the mixture.

Pour in the egg mix. Sprinkle on the remaining mozzarella cheese and top with some hot pepper flakes, if desired.

Put the pie plate into the preheated oven and bake for 35-40 minutes or until the eggs are set and the middle of the quiche is firm.

Keep leftover quiche in your fridge, covered, for 3-4 days. It is best enjoyed while freshest, so you should try to enjoy the leftovers within a day or two.

If you’d like to make it ahead for a brunch or dinner, you can cool the quiche doner kebab completely, wrap it tightly in plastic and then cover with aluminum foil wrap. Place it in the freezer for up to three months.

You can even freeze a cooked quiche to reheat for a quick weeknight meal. Just take it out of the freezer, remove the plastic wrap and foil, and bake from frozen at 375℉ until the quiche is heated through and hot in the middle.

You can also freeze any extra kebab sauce for up to three months.
